WHere is an easy take on a beverage from the seasonal menu. Designed as a large-volume pre-mixed which is packed with the essence associated with holiday season, making it excellent for hosting a festive gathering. Any leftover citrus syrup you can use for morning drinks, puddings, or to mix more rounds of the drink.
Bikini Recipe
Serves 10 guests
For the Clementine Cordial (yields 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
For the Premix (produces 850ml, to serve 10)
400ml good quality vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
Fresh cranberries, for garnish
Mandarin essential oil, as a final touch
Instructions
For the Citrus Syrup: Combine all the ingredients inside a pot, bring to a simmer, mixing so the sugar melts. After that, take off the heat and leave to reach room temperature entirely. Decant into an sealable bottle, close it keeping it in the refrigerator, where it will keep for up to four weeks.
To make Batch Mix: Combine every liquids into a sizeable container, allow it to infuse for one hour, then strain best through muslin, to ensure it's fully clarified.
To serve: Measure 85ml from the cocktail base to a mixing glass packed with ice, gently stirring gently for a minute to cool it down. Filter into a frosted cocktail glass or equivalent, top with the cranberries adding the final touch with a quick spritz of the essential oil over the drink.
